What's Cookin' in Diedre's Kitchen?
Greetings Everyone - hope you celebrated our wonderful Independence Day and are continuing to enjoy your summer!
This July has definitely started off with a bang! The first three shows to close have brought many new people to Pampered Chef and wonderful free gifts to our hosts!
Host Spotlight!
Lynda Seefeldt in Chandler!
Lynda hosted the largest show to close so far this month and received approximately $135 in free products from Pampered Chef! We enjoyed a delicious Stawberry Spinach Salad served in the beautiful
Simple Additions Large Bowl this is only available until August 1st.

The salad was complimented with a Cool Veggie Pizza made on the Large Round Stone. This is a wonderful product to have for making pizzas, cookies, or any of the sumptuous dinner or appetizer Rings or Wreaths found in the "All the Best" cookbook. As a special treat I brought a Carmel Pecan Butter Cake for dessert that I made in the Fluted Stoneware Pan without heating the oven! The Pampered Chef stoneware is perfect for baking cakes in the microwave in only 15 minutes! Yum!
Hosting a show is easy and fun - you invite the guests and provide the food for me to prepare - I'll do the rest! Lynda shared these thoughts with me after the show:

Your Food Tips for July
Life is Just a Bowl of Cherries

Cherries with stems last longer, but cherries without stems are the better buy.

Wash cherries and store in a plastic bag for up to 5 days in the refrigerator

1 pound of cherries equals 2-1/2 to 3 cups of pitted cherries.

Cherries can be frozen - pitted or not - for up to one year. Rinse and dry them before storing in zip-closure freezer bags. Seal all but about 1.2 inch of the bag, then insert a straw into the opening and suck out as much air as possible; remove the straw and quickly zip up the opening. The less air in the bag, the better the cherries will keep. When you're ready to use the cherries, thaw overnight in the fridge or 30 minutes at room temperature.

Add 1/8 to 1/4 teaspoon of almond extract to your cherry recipes to enhance the cherry flavor.

Quick tip for a summertime treat - buy big, sweet cherries with stems. Wash and dry thoroughly, then dip in melted chocolate and set on the Pampered Chef Cooling Rack covered with Pampered Chef Parchment Paper. Pop the rack in the refrigerator (save space by folding the legs flat) until the chocolate is set.

Quick Summer Dessert - Use the PC Cherry Pitter to remove cherry pits. Combine cherries with a little brandy and sugar in the Professional Saute Pan over low heat for about 5 minutes, or until the cherries begin to soften. Spoon hot cherries over vanilla ice cream.
Cherry Chicken Breasts
8 skinless, boneless chicken breast halves 1/4 cup melted butter 2 cups pitted sweet cherries, (or a 16 oz can of Bing cherries, drained, juice reserved) 1/2 cup brown sugar 1 (12 fluid ounce) can or bottle chile sauce 1/2 cup water 1 tablespoon Worcestershire sauce 1 onion, thinly sliced 1/2 cup raisins salt and pepper to taste 1 cup brandy
Preheat oven 350 degrees. Lightly brush chicken breasts with melted butter and bake in the Rectangle Baker (stoneware) for 20 minutes, or until just lightly browned. Reduce heat to 325°F (165° C).
In the Rectangle Baker Bowl/Lid combine the reserved cherry liquid, sugar, chile sauce, water, Worcestershire sauce, onion, raisins and salt and pepper to taste. Mix all together and pour mixture over chicken.
Cover the Rectangle Baker with the Bowl/Lid and bake at 325°F (165°C) for 1 hour. Remove cover, add cherries and brandy to chicken and bake uncovered for another 15 minutes. Makes 8 servings
(Only two of you? Cut the recipe in fourths and use the Mini-Baker - a perfect 4 cup volume for dinners for two!)
